豬血蛋白質高達18.9%,蛋白質含量是豬肉的4倍,雞蛋5倍。豬血漿蛋白質含氨基酸達18種之多,包括人體不能含成的8種必需氨基酸,富含植物所缺少的精氨酸。豬血中還含有多種無機鹽和微量元素。如鈉、鉀、磷、鐵、鋅、 錳、銅、鈷等

每100克豬血含有16克蛋白質,高於牛肉和瘦豬肉的比例。 由於豬血蛋白中含有的氨基酸比例接近人體,因此非常容易使用。豬血性溫,有解毒清腸、補血的功效。含維生素B2、維生素C、蛋白質、、磷、、尼克酸等營養成分。由於豬血富含鐵,可改善貧血!

 

每100克豬血中含鐵45毫克,比肉類高100倍。平時適當吃些豬血,有利於防治貧血(缺鐵性貧血)。

北京醫科大 學少兒衛生研究所曾用豬血製作出餅乾,發現對防治小學生缺鐵性貧血有很好的療效。豬血中含量元素的鉻,可防止動脈硬化豬血含有一定量的卵磷脂,可抑制低密度脂蛋白的有害作用,有助於預防和治療動脈粥樣硬化。對預防和治療老年癡呆症,睡眠不足,健忘或多夢或失眠等疾病也非常有益。

 

研究證實,豬血漿蛋白被人體消化吸收後,能分解出一種解毒和滑腸的物質。由於豬血富含鐵和蛋白質,有助於修復肌肉。


謠言:空汙嚴重,多喝豬血湯可以清肺?
坊間謠傳老祖宗說多吃豬血、喝豬血湯可幫助清肺,但營養師陳淑茹表示沒有科學根據可以證實。中醫主張吃白色食物對肺很好的說法,而美國癌症協會指出,可多吃十字花科蔬菜,如高麗菜、大白菜、花椰菜等可降低肺癌的發生率,多補充含β胡蘿蔔素的天然食物,如甜椒、彩椒、玉米、胡蘿蔔和地瓜等也可以降低肺癌風險。

 

營養師陳淑茹提醒建議直接吃天然食物,而非保健類食品。

任何好的時物一旦過量食用便會產生壞處,而豬血吃過量,恐會造成鐵中毒,影響其他礦物質的吸收!此外,豬血中含有豬體內的代謝廢物,如激素,藥物,尿素等,大量食用恐會給人體帶來負擔!

 

患有高膽固醇血症或肝病或高血壓和冠心病的患者應該少吃。豬血與大豆一起食用,恐引起消化不良。與海帶一起吃,可能引起便秘!

 

謠言3:多吃豬腳、豬皮可補充膠原蛋白?
錯!豬皮中有80%是脂肪,蛋白質僅佔20%。靜宜大學食品營養學系副教授陳淑茹表示豬皮組成的蛋白質,在一般食物中即能攝取,而且蛋白質還需搭配維生素C,才能合成轉化為膠原蛋白,所以多吃豬皮、豬腳等僅是多吃脂肪,就算內含的膠原蛋白也是大分子,無助於人體的吸收與轉換。

陳淑茹建議,要讓皮膚保持光澤,要做好防曬,多吃富含維生素C的蔬果可以降低自由基的攻擊,減少膠原蛋白的流失。
